The tenderloin is a long, slim muscle that runs along the pig's spine and does very little work, which makes it the most tender — and the leanest — cut of pork. Not to be confused with the larger pork loin, the tenderloin is a small, prized piece often sold whole and cooked quickly.
At about 119 calories per 100 grams raw, pork tenderloin is comparable to skinless chicken breast for leanness, while delivering excellent protein and an outstanding amount of thiamin, along with niacin, B6, selenium and phosphorus. Because it has so little fat, it can dry out if overcooked.
Modern food-safety guidance allows pork to be cooked to a slightly pink 63C / 145F followed by a short rest, which keeps the tenderloin juicy. A quick sear and roast, or a slice into medallions, makes it one of the fastest lean dinners going.
