About Mortadella, beef, pork
Mortadella is a large, smooth Italian cured sausage of finely ground pork, here blended with beef, studded with small cubes of fat, gently spiced and cooked until silky. The forerunner of American bologna, it has a delicate, faintly peppery flavor and a soft, even texture.
As a cured deli meat it is rich: about 311 calories per 100 grams, with around 25 grams of fat and a substantial 1,250 milligrams of sodium. It provides protein and some B12 and zinc, but as a processed, fatty, salty meat it is best enjoyed in the thin slices it is traditionally cut into rather than by the handful.
It is sliced wafer-thin for antipasto boards and Italian sandwiches, diced into pasta and frittatas, or blended into the filling of tortellini. A little delivers a lot of flavor.
