Corn flour here means corn ground far finer than cornmeal — a soft, powdery whole-grain flour from white corn. (It should not be confused with the British term 'cornflour', which means cornstarch.) Naturally gluten-free, it is used in cornbreads, pancakes, tortillas and as a smooth component in gluten-free flour blends.
