About Cheese, ricotta, whole milk
Ricotta is a soft, fresh, slightly grainy cheese with a mild, gently sweet, milky flavor. Traditionally made from the whey left over from other cheeses (its name means 'recooked'), it's the creamy filling in lasagne and cannoli, and just as good spread on toast with honey or fruit.
As cheeses go it's relatively gentle: a good source of protein and calcium, with phosphorus and B12, and — being fresh and unsalted compared with aged cheeses — lower in sodium. The whole-milk version is richer; part-skim trims some of the fat.
Soft, mild and versatile, ricotta moves easily between savory and sweet — a lighter, fresher cheese that adds creaminess and protein without the salt and intensity of the aged kinds.
