About Rice flour, white

White rice flour is milled from polished white rice, with the bran and germ removed, leaving a soft, fine, bright-white powder. Naturally gluten-free and very neutral in flavor, it is a cornerstone of East and Southeast Asian cooking — used for rice noodles, dumpling wrappers, mochi and countless sweets — and a workhorse of gluten-free baking.
