About Rice flour, brown
Brown rice flour is finely ground whole-grain brown rice, with the bran left on. Naturally gluten-free, it is a staple of gluten-free baking and a traditional ingredient across Asia for noodles, dumplings and sweets. It has a slightly sandy texture and a mild, nutty taste that is a touch heartier than its white counterpart.
At roughly 378 calories per 100 grams of dry flour, it is mostly carbohydrate, but keeping the bran gives it more fiber, B vitamins, magnesium, phosphorus and manganese than refined white rice flour. Because it contains no gluten, it cannot trap gas on its own, so in baking it is usually combined with binders such as xanthan gum and other gluten-free flours and starches.
Brown rice flour brings structure and a pleasant graininess to gluten-free breads, pancakes and cookies, and works as a coating for frying. As with brown rice itself, the oils in the bran mean it stores best somewhere cool to keep it from turning rancid.
