About Crustaceans, crab, dungeness, cooked, moist heat
The Dungeness crab (Metacarcinus magister) is a prized West Coast crab from the cool Pacific waters of North America, ranging from Alaska down to California and named for a small town on the Washington coast. Recognized by its wide, oval, purplish-brown shell, it yields unusually generous amounts of sweet, delicate, tender meat from both its broad body and its meaty claws. Dungeness is lean and high in protein, offering vitamin B12, zinc, selenium, copper, and omega-3 fatty acids.
Landed mostly in the fall and winter, it has become a holiday tradition on West Coast tables. Often sold freshly cooked whole, it is enjoyed simply cracked and dipped in melted butter or lemon, and the sweet meat is folded into crab cakes, the San Francisco seafood stew cioppino, salads, pasta, and sandwiches. Live crabs are steamed or boiled, while picked meat is ready to use straight away. Choose live crabs that are active and feel heavy for their size, or buy crab already cooked, and keep it well chilled on ice, using cooked crabmeat within a day or two for the sweetest flavor.
