About Crustaceans, crab, alaska king, raw
The red king crab (Paralithodes camtschaticus) is a giant, spiny crab from the cold waters of the North Pacific and Bering Sea, prized as one of the most luxurious shellfish in the world. Despite its name, it turns bright red only when cooked. Its enormous legs hold generous amounts of sweet, rich, snow-white meat with a firm, succulent texture that is considered a delicacy. King crab is lean and high in protein, supplying vitamin B12, zinc, selenium, and omega-3 fatty acids.
Because the crab is almost always cooked and frozen at sea, the legs and claws are usually sold pre-cooked and simply need gentle reheating by steaming, boiling, or baking, then served with melted butter and lemon. Take care not to overcook the delicate meat. Thaw frozen king crab in the refrigerator, and keep it well chilled until you are ready to heat and serve it.
