The red king crab (Paralithodes camtschaticus) is a giant, spiny crab from the cold waters of the North Pacific and Bering Sea, prized as one of the most luxurious shellfish in the world. Despite its name, it turns bright red only when cooked. Its enormous legs hold generous amounts of sweet, rich, snow-white meat with a firm, succulent texture that is considered a delicacy.
