Snow crab (genus Chionoecetes) is a cold-water crab from the northern Pacific and Atlantic, named for its long, spindly legs and prized sweet meat. The flesh from its legs and claws is snowy white with delicate reddish tints, with a mild, slightly sweet, briny flavor and a tender, fibrous texture that pulls apart in satisfying strands.
