The blue crab (Callinectes sapidus), whose scientific name fittingly means beautiful savory swimmer, is a prized shellfish of the Atlantic and Gulf coasts, famous for its sweet, delicate meat and bright sapphire-blue claws. It is the heart of the Chesapeake Bay's crab culture and the crab behind Maryland's beloved steamed crabs, crab cakes, and she-crab soup, and when a crab molts its hard shell it becomes the prized soft-shell crab, eaten whole, shell and all.
