About Crustaceans, crab, blue, raw
The blue crab (Callinectes sapidus), whose scientific name fittingly means beautiful savory swimmer, is a prized shellfish of the Atlantic and Gulf coasts, famous for its sweet, delicate meat and bright sapphire-blue claws. It is the heart of the Chesapeake Bay's crab culture and the crab behind Maryland's beloved steamed crabs, crab cakes, and she-crab soup, and when a crab molts its hard shell it becomes the prized soft-shell crab, eaten whole, shell and all.
The tender white body meat and richer brown claw meat are sweet and briny, an excellent source of lean protein, vitamin B12, zinc, copper, and selenium. Blue crabs are usually steamed or boiled with a spicy blend such as Old Bay, then picked apart by hand, a messy, sociable ritual at the center of any crab feast. Their blue shells, colored by a copper pigment, turn bright orange-red once cooked. Look for lively crabs that feel heavy for their size if buying them live, or fresh-picked meat that smells clean and sweet, and cook live crabs the same day for the finest flavor.
