Dungeness crab is a large, sweet-fleshed crab from the cold waters of the North American Pacific coast, named after a small town in Washington State. It is prized for the generous amount of tender, delicately sweet meat in its body and legs, and is a centerpiece of West Coast seafood feasts, especially around the winter holidays.
Dungeness crab is lean and protein-rich, with about 86 calories per 100 grams raw, around 17 grams of protein and only a gram of fat. It is a good source of vitamin B12, selenium, zinc and copper. Like most crab it carries some natural sodium and a little cholesterol, but it is very low in saturated fat.
Whole Dungeness crab is usually cooked simply — steamed or boiled — and served cracked with melted butter or lemon, letting the sweet meat speak for itself. The picked meat goes into crab cakes, cioppino, salads and dips. As with all crab, the bulk of the work is in the cracking and picking.
