About Cocoa mix, powder

Cocoa powder is the low-fat solid that remains after roasted cocoa beans are ground into chocolate liquor and most of their cocoa butter is pressed out, leaving a deeply flavored, intensely chocolatey powder. It comes in two main styles: natural cocoa, which is light, acidic, and fruity, and Dutch-process cocoa, treated with alkali to be darker, smoother, and mellower. Unsweetened cocoa is surprisingly nutritious, rich in flavanol antioxidants, fiber, iron, magnesium, and potassium with very little sugar.
