Sockeye salmon (Oncorhynchus nerka), also known as red salmon, is the deepest-colored of the Pacific salmon, with vivid red-orange flesh and a rich, full, pronounced salmon flavor. Wild-caught largely in Alaska and the Pacific Northwest, it is firmer and leaner than king salmon yet intensely flavorful. Sockeye is one of the best sources of heart-healthy omega-3 fatty acids, along with high-quality protein, vitamin D, vitamin B12, and astaxanthin, the antioxidant that gives the flesh its brilliant color.

It is excellent grilled, broiled, baked, or pan-seared, and because it is lean it is best cooked just to done to keep it moist. Much of the catch is also canned, smoked, and cured. Choose fillets with firm, deeply colored flesh and a clean, fresh smell, and keep salmon well chilled, using it within a day or two or freezing it.
