The crimini — also sold as the brown, Italian or chestnut mushroom — is the same species as the everyday white button, just a naturally browner strain harvested young. It is firmer, a shade earthier in flavor, and left to grow on it becomes the portabella, making these three mushrooms essentially one food at different ages.
