About Mushrooms, brown, Italian, or Crimini, raw

The crimini — also sold as the brown, Italian or chestnut mushroom — is the same species as the everyday white button, just a naturally browner strain harvested young. It is firmer, a shade earthier in flavor, and left to grow on it becomes the portabella, making these three mushrooms essentially one food at different ages.

Crimini are very light, around 22 calories per 100 grams, and bring a respectable haul of B vitamins (riboflavin, niacin, pantothenic acid), selenium, copper and potassium, plus the small amount of vitamin D mushrooms can offer when grown under UV light. They are a genuinely nutrient-dense way to add bulk and savor to a meal for almost no calories.

They behave just like white buttons in the kitchen but reward you with a little more depth — slice them into pasta sauces, soups, omelettes and stir-fries, or roast them whole. Like most mushrooms, they brown and taste best when cooked in a hot, fairly dry pan so their water can escape.
