About Mushrooms, portabella, raw
The portabella is simply a crimini mushroom grown to full maturity, its cap opened wide and its flesh turned dense and steak-like. That size and meaty bite are exactly why it became the go-to mushroom for vegetarian grilling — a whole cap holds its shape on a barbecue and makes a convincing stand-in for a burger.
At around 22 calories per 100 grams it is almost all water, with very little fat or sugar, yet it carries a useful set of B vitamins (especially riboflavin, niacin and pantothenic acid), the mineral selenium, copper and potassium. Like all mushrooms, it is one of the few non-animal foods that can supply vitamin D, particularly when it has been exposed to sunlight or UV light.
Its open gills soak up marinades and darken any dish they join, so portabellas are best grilled, roasted or pan-seared until their moisture cooks off and the flavor deepens. Sliced thick, they add a savory, umami backbone to fajitas, sandwiches and pasta.
