Wild celery is the common name for the untamed ancestral form of celery (Apium graveolens), a strongly aromatic marsh plant of Europe and Asia also known as smallage. Wilder and more pungent than the mild, crunchy celery sold in supermarkets, it has slender, hollow stalks and dark, glossy leaves with a bold, almost peppery celery flavor that cooks use sparingly as a seasoning herb. Its leaves and stems flavor soups, stocks, and stews, and its tiny seeds are dried as celery seed, the pungent spice behind celery salt and many pickling and spice blends.
