About Purslane, raw
Purslane is a low-growing succulent with small, fleshy, paddle-shaped leaves and a crisp, juicy texture and lemony, slightly salty tang. Often dismissed as a garden weed in some countries, it is a cherished vegetable across the Mediterranean, the Middle East and Mexico.
It is extremely light at around 16 calories per 100 grams, but nutritionally remarkable: purslane is one of the richest plant sources of omega-3 fatty acids (specifically ALA), and it supplies vitamin A, vitamin C, magnesium, potassium and manganese. Like spinach it also contains oxalates, which slightly limit mineral absorption.
The tender leaves and stems are eaten raw in salads, where their crunch and citrusy bite shine, or briefly cooked into soups, stews and stir-fries. It is a traditional ingredient in Levantine fattoush and many regional dishes that prize its fresh, lemony quality.
