About Celeriac, raw

Celeriac, or celery root, is the gnarled, knobbly root grown from a relative of ordinary celery. Beneath its rough, earthy skin is firm cream-colored flesh with a flavor that marries celery and parsley — fresher and more aromatic than its homely appearance suggests.
