About Wheat flour, white, all-purpose, enriched, bleached
All-purpose (plain) white flour is the workhorse of the kitchen — refined wheat milled to a fine powder and the foundation of bread, cakes, pastry, sauces and coatings. Stripped of the bran and germ, it's smooth, neutral and versatile across almost any recipe.
As a refined flour it's built mostly on starch, with some protein (the gluten that gives dough its structure) and, when enriched, added-back B vitamins and iron — though it's low in the fiber and nutrients that wholemeal flour retains. On its own it's a dry ingredient measured in cups rather than eaten as a food.
It's the default flour for good reason: reliable and all-purpose. Swapping in some wholemeal flour is the simplest way to add fiber and nutrients back to home baking.
