About Wheat germ, crude

Wheat germ is the embryo of the wheat kernel — the small part from which a new plant would sprout — and it is removed during the milling of white flour because its oils shorten shelf life. That is a nutritional loss, because the germ is the most nutrient-dense part of the grain, with a pleasant toasty, nutty flavor.

At about 360 calories per 100 grams, wheat germ packs a great deal of nutrition into a small fraction of the kernel: it is an outstanding source of vitamin E, folate and thiamin, very high in zinc, magnesium, manganese, phosphorus and iron, and rich in plant protein and fiber.
