About Wheat germ, crude
Wheat germ is the embryo of the wheat kernel — the small part from which a new plant would sprout — and it is removed during the milling of white flour because its oils shorten shelf life. That is a nutritional loss, because the germ is the most nutrient-dense part of the grain, with a pleasant toasty, nutty flavor.
At about 360 calories per 100 grams, wheat germ packs a great deal of nutrition into a small fraction of the kernel: it is an outstanding source of vitamin E, folate and thiamin, very high in zinc, magnesium, manganese, phosphorus and iron, and rich in plant protein and fiber. As a wheat product, it does contain gluten.
It is usually used as a supplement to other foods — a couple of spoonfuls stirred into smoothies, yogurt, porridge or baking batters to enrich them. Because the germ's oils are prone to oxidizing, wheat germ should be kept sealed in the fridge or freezer, and toasted germ keeps a little longer than raw.
