About Oil, grapeseed

Grapeseed oil is pressed from the seeds left over after grapes are crushed for wine — a clever use of a byproduct that would otherwise go to waste. It is very light in color and flavor, with a relatively high smoke point that suits sautéing, frying and dressings alike.

It is high in polyunsaturated fat, chiefly the omega-6 fat linoleic acid, and a good source of vitamin E. Like all oils it is pure fat at about 884 calories per 100 grams. Its very neutral taste is the main selling point: it carries other flavors, such as in a vinaigrette or an infused oil, without competing with them.

Clean, light and unobtrusive, grapeseed oil is a practical everyday choice, particularly where you want the other ingredients — not the oil — to do the talking.
