Pink salmon (Oncorhynchus gorbuscha), also called humpback or humpy salmon, is the smallest and most abundant of the Pacific salmon, returning in huge numbers to the cold waters and rivers of the North Pacific. Its delicate flesh is pale rose-pink with a soft texture and a mild, light flavor that is the gentlest of the salmon family.
