About Fish, herring, Atlantic, pickled
Atlantic herring (Clupea harengus) is a small, silvery, oily fish that swims in vast schools in the cold North Atlantic and ranks among the most important and abundant food fish in the world, as well as a keystone forage fish that feeds seabirds, whales, and larger fish. Its soft, flavorful flesh is rich and savory, and because it is an oily fish it is especially high in heart-healthy omega-3 fatty acids, along with high-quality protein, vitamin D, vitamin B12, and selenium.
Herring is enjoyed in countless ways, fresh and simply grilled or fried, but most famously preserved by smoking, pickling, salting, and curing. Smoked herring becomes kippers and bloaters, while pickled, soused, and matjes herring and tangy rollmops are beloved across Northern Europe and Scandinavia. Young herring are also canned as sardine-style fillets, which deliver bone-in calcium. Choose fresh herring that smells clean and briny with bright, clear eyes and firm flesh, and keep it very well chilled, using fresh fish quickly or freezing it, since oily fish spoils fast.
