About Butter, salted
Butter is churned cream — milk fat separated, worked together and lightly salted. It's one of cooking's foundational fats, prized for the flavor and richness it brings to everything from a slice of toast to a pan sauce.
Nutritionally it's almost pure fat, which makes it very energy-dense and high in saturated fat, with a little cholesterol and small amounts of fat-soluble vitamins such as A. The salted version adds sodium too. None of that makes it a health food, but used in modest amounts it's hard to beat for taste.
Because it's so calorie-dense, butter is a seasoning and a cooking medium more than something to eat by the spoonful — a small knob does a lot of work.
