About Sorghum

Sorghum (Sorghum bicolor) is an ancient cereal grass grown around the world, an important staple across Africa and Asia and one of the most drought-tolerant grains there is. The small, round, beige-to-reddish grains have a mild, earthy, slightly sweet flavor and a hearty chew. Naturally gluten-free, sorghum is a wholesome whole grain rich in fiber, protein, B vitamins, iron, and antioxidants. The whole grains cook up like rice or quinoa for salads, pilafs, and bowls, can be popped like tiny popcorn, and are milled into a versatile gluten-free flour for baking and flatbreads such as Indian jowar roti.

Sweet sorghum varieties are pressed and boiled down into sorghum syrup, a rich, molasses-like sweetener, and the grain is also used in porridge and brewing. Store sorghum grains and flour in an airtight container in a cool, dry place.
