Ginkgo nuts, called ginnan in Japan and baiguo in China, are the edible seeds of the ancient ginkgo tree (Ginkgo biloba), the maidenhair tree, a living fossil that has grown on earth for millions of years. Female trees drop a soft, notoriously foul-smelling outer flesh around the seed, and inside the silvery hard shell sits a soft, chewy kernel that turns a translucent jade green when cooked, with a mild, slightly sweet and nutty flavor and a faint bitterness.
