A treasured, festive ingredient in Chinese, Japanese, and Korean cooking, the nuts are roasted or pan-toasted as a snack, threaded onto skewers, folded into the savory steamed custard chawanmushi, and simmered into soups, rice dishes, and congee. Ginkgo nuts provide vitamin C, copper, manganese, potassium, and B vitamins.
