About Flaxseed, ground

Flaxseed, also called linseed, is the small, glossy seed of the flax plant (Linum usitatissimum), prized as one of the richest plant sources of omega-3 fatty acids in the form of ALA. The tiny brown or golden seeds have a mild, nutty flavor and a genuinely impressive nutrition profile, loaded with soluble and insoluble fiber, plant protein, and lignans - antioxidant compounds studied for a range of possible health benefits.

To unlock those nutrients, flaxseeds are best ground, since the whole seeds are so slick they often pass through the body undigested. Ground flaxseed, or flax meal, is stirred into smoothies, oatmeal, yogurt, and baked goods for a nutty boost, and whisked with water it forms a gel that makes a popular egg substitute in vegan baking. The seeds are also pressed into flaxseed oil, valued as a supplement but not for cooking at high heat.

Because the ground meal and oil turn rancid quickly, buy them in small amounts and store them airtight in the refrigerator or freezer.
