About Fish, lingcod, raw

Lingcod is a popular Pacific food fish caught along the North American west coast from Alaska down to Baja California. Despite the name it is neither a ling nor a cod but a member of the greenling family, prized by anglers and home cooks alike for its firm, lean, snow-white flesh and clean, mild flavor. Curiously, the raw meat is sometimes tinged blue or green from a natural pigment, but it cooks up bright white and flaky every time.
