About Emu, ground, cooked, pan-broiled
Emu is a lean red meat from the emu (Dromaius novaehollandiae), the large flightless bird native to Australia and now farmed around the world for its meat, oil, and leather. Despite coming from a bird, emu meat looks and tastes much like lean beef, deep red with a rich, savory flavor and a fine, tender grain. It is prized as a healthy alternative to red meat, being very low in fat and cholesterol while high in protein, iron, vitamin B12, and zinc.
Because it is so lean, emu is best cooked quickly over high heat and served rare to medium-rare, since overcooking dries it out; the tender fan and loin fillets are grilled, pan-seared, or roasted, while tougher cuts are ground for burgers and sausages or slow-braised. It takes well to bold marinades and pairs nicely with fruity and peppery sauces. A brief rest after cooking keeps it juicy. Choose bright red, firm emu fillets with little marbling, and keep the meat well chilled, using it within a day or two or freezing it.
