About Barley malt flour

Barley is one of the world's oldest cultivated grains, a hearty cereal in the grass family first grown in the ancient Near East, with a mild, nutty flavor and a satisfying chew. The most common form is pearl barley, which has had its outer bran polished off so it cooks faster, while hulled barley keeps more of its fiber and nutrients. A wholesome whole grain, barley is especially rich in a soluble fiber called beta-glucan, studied for its role in supporting healthy cholesterol, and it provides protein, manganese, and selenium, though it does contain gluten.

It adds heartiness to soups and stews, simmers into pilafs, risotto-style orzotto, and grain bowls, and stands in for bulgur in a chewy tabbouleh. Barley is also famously malted, its sprouted grains dried and used to brew beer, distill whiskey, and make malt syrup and malted milk. Toasting the raw grains in a dry pan deepens their nutty flavor, and cooked barley keeps well in the refrigerator as a make-ahead base for meals throughout the week.
