About Barley, pearled, raw
Barley is one of the oldest cultivated grains, and pearl (or pearled) barley — polished to remove the tough outer hull and bran — is the most common form on shop shelves. It cooks faster than the whole grain into plump, chewy, satisfying kernels with a mild, nutty flavor.
