About Syrups, maple

Maple syrup is the amber sweetener made by boiling down the sap of maple trees — it takes around 40 liters of sap to make one of syrup, which is much of why the pure stuff is prized (and pricey). Rich and distinctive, it's the classic partner to pancakes and waffles.

For all its natural image, maple syrup is essentially sugar — mostly sucrose — and calorie-dense as a result, so the body treats it much like other sugars. It does carry a genuine, if modest, dose of minerals such as manganese and zinc, plus antioxidants, which sets it slightly apart from refined sugar.

A more characterful sweetener than plain sugar, real maple syrup is a lovely thing in moderation — just be sure it's '100% pure maple', since cheaper 'pancake syrups' are often just flavored corn syrup.
