About Mung beans, mature seeds, cooked, boiled, with salt

The mung bean (Vigna radiata) is a small green legume widely grown and eaten across Asia, prized for its mild, slightly sweet, nutty flavor and how quickly it cooks. It is best known as the source of the crunchy bean sprouts that fill stir-fries, spring rolls, and salads, and its starch is what gives cellophane or glass noodles their signature slippery bite.
