About Game meat, muskrat, raw
The muskrat (Ondatra zibethicus) is a semiaquatic rodent of North American wetlands that has long been trapped for both its fur and its meat. As food it is a traditional game animal, best known in parts of the Chesapeake, the Detroit River region, and rural marsh communities, where it is sometimes called marsh rabbit and has historically been eaten during Lent. Because the muskrat feeds on aquatic plants such as cattails and rushes, its dark, rich meat has a strong, gamey flavor unlike farmed meats, and careful cleaning to remove the scent glands and fat is essential to good results.
Cooks typically parboil it and then braise or stew it slowly with onions and seasonings until tender, taming the wild flavor. The lean, dark meat is a good source of protein and iron. It is a regional and subsistence food tied to trapping traditions rather than a market meat. Slow, moist cooking is the key to a tender result. Choose fresh, properly cleaned muskrat from a trusted trapper or butcher, keep it very cold, and cook it thoroughly until well done.
