Bison, often called buffalo in North America, is a large native bovine (Bison bison) whose lean red meat has become a popular alternative to beef. Once central to the diet and culture of Native American peoples and hunted nearly to extinction in the 1800s, the animal has made a celebrated comeback and is now raised on ranches across the Great Plains.
