Seatrout is a popular saltwater fish prized by anglers and seafood lovers along coastal waters, with the spotted seatrout, or speckled trout, of the southern United States among the best known. Despite its name it is not a true trout but a member of the drum and croaker family (genus Cynoscion), closely related to weakfish and corvina, with a delicate, slightly sweet flavor and tender, flaky white flesh.

Seatrout is a lean source of high-quality protein, low in fat and calories while providing B vitamins, selenium, and some omega-3 fats. Its mild fillets take well to simple preparations and are delicious pan-seared, baked, grilled, blackened, or lightly fried, paired with lemon, fresh herbs, and butter. Because the flesh is soft and delicate - the related weakfish is even named for its tender, easily torn mouth - it is best handled carefully and cooked gently, just until it flakes, so it does not fall apart or dry out.
