The painted comber (Serranus scriba) is a small, colorful marine fish of the grouper and sea bass family, found across the eastern Atlantic, the Mediterranean, and the Black Sea. Named for the intricate blue-and-red markings on its head, it is a common catch for recreational and small-scale coastal fishermen around southern Europe and North Africa. On the plate it offers firm, white, lean flesh with the clean, mildly sweet flavor typical of the sea bass clan, well suited to simple Mediterranean preparations.
Because the fish is modest in size, it is usually cooked whole, whether grilled over coals, roasted, or dropped into a rustic fish soup or stew where its bones add body to the broth.
