About Fish, cisco, raw

The cisco (Coregonus artedi), also known as the lake herring or tullibee, is a slender silvery freshwater fish in the whitefish family, native to the cold, clear lakes of northern North America. It has soft, delicate, white flesh with a mild, slightly sweet flavor and a higher oil content than many freshwater fish, which makes it especially flavorful. Cisco is a good source of quality protein and heart-healthy omega-3 fatty acids, along with vitamin B12 and selenium.

The rich flesh is excellent smoked, a traditional preparation around the Great Lakes, and it is also pan-fried, baked, or grilled, while its roe is sometimes sold as a golden caviar. Because the oily flesh is delicate, freshness matters. Choose fish that smells clean and fresh with firm flesh, and store cisco well chilled in the refrigerator, using it quickly or freezing it for later.
