About Fish, cisco, raw
The cisco (Coregonus artedi), also known as the lake herring or tullibee, is a slender silvery freshwater fish in the whitefish family, native to the cold, clear lakes of northern North America. It has soft, delicate, white flesh with a mild, slightly sweet flavor and a higher oil content than many freshwater fish, which makes it especially flavorful. Cisco is a good source of quality protein and heart-healthy omega-3 fatty acids, along with vitamin B12 and selenium.
The rich flesh is excellent smoked, a traditional preparation around the Great Lakes, and it is also pan-fried, baked, or grilled, while its roe is sometimes sold as a golden caviar.
