Atlantic pollock (Pollachius pollachius), also known as pollack, lythe, or coley, is a popular saltwater fish in the cod family that ranges through the cold North Atlantic. It has firm white flesh and a mild, slightly more savory flavor than cod, and as an affordable, abundant whitefish it has become a sustainable everyday alternative to its pricier relatives. It is a close relative of, but distinct from, the Alaska pollock used across much of the frozen-fish trade.
Pollock is lean and low in fat, offering high-quality protein, vitamin B12, selenium, phosphorus, and some omega-3 fatty acids for relatively few calories. Its mild taste and flaky texture make it endlessly useful in the kitchen, baked, broiled, pan-fried, smoked, or battered for classic fish and chips.
