About Elk, free range, roast, eye of round, cooked (Shoshone Bannock)

Elk, also called wapiti (Cervus canadensis), is one of the largest members of the deer family, and its lean red meat is a prized game meat across North America and parts of Asia. Darker and richer than beef but milder and less gamey than many people expect, elk has a clean, slightly sweet flavor and a tender, fine-grained texture. As a lean game meat, it is an excellent source of high-quality protein, iron, zinc, phosphorus, and B vitamins, with very little fat.

Elk is used much like beef, in steaks, roasts, burgers, chili, stews, and sausages, and it pairs well with bold seasonings, mushrooms, and fruit-based sauces. Because the meat is so lean, it cooks faster than beef and is best served rare to medium or braised gently, since overcooking quickly dries it out. Choose deep-red, firm meat, and keep it well chilled, cooking fresh elk within a couple of days or freezing it.
