About Game meat, elk, raw

Elk, also called wapiti (Cervus canadensis), is one of the largest members of the deer family, and its lean red meat is a prized game meat across North America and parts of Asia. Darker and richer than beef but milder and less gamey than many people expect, elk has a clean, slightly sweet flavor and a tender, fine-grained texture. As a lean game meat, it is an excellent source of high-quality protein, iron, zinc, phosphorus, and B vitamins, with very little fat.
