About Crustaceans, spiny lobster, mixed species, raw
The spiny lobster — also called rock lobster or langouste — is a warm-water relative of the familiar clawed lobster, but with a crucial difference: it has no large claws. Instead, almost all of its firm, sweet meat is in the tail, which is why it is so often sold simply as 'lobster tails'. Long spiny antennae give the animal its name.
Spiny lobster is lean and rich in protein, with about 112 calories per 100 grams raw, around 21 grams of protein and under two grams of fat. It supplies vitamin B12, selenium, zinc and copper. Like other shellfish it contains some cholesterol but very little saturated fat.
The tails are the prize, usually split and grilled or broiled with butter, or steamed and served with drawn butter and lemon. The meat is slightly firmer and arguably sweeter than that of clawed lobster. Because it is fished in many regions, it is worth choosing sustainably sourced tails where you can.
