About Crustaceans, spiny lobster, mixed species, cooked, moist heat
The spiny lobster (family Palinuridae), also called rock lobster or langouste, is a clawless cousin of the familiar clawed lobster, found in warm and temperate seas around the world. In place of large front claws it has two long, thick, spiny antennae and a heavily armored shell, and nearly all of its prized meat is packed into the muscular tail. That tail meat is sweet, firm, and a little chewier than clawed-lobster meat, with the same luxurious richness.
Spiny lobster is a lean source of high-quality protein and supplies selenium, zinc, copper, vitamin B12, and omega-3 fatty acids, with very little fat. The tails are most often split and grilled or broiled with butter, and they are also steamed, boiled, roasted, and used in soups, salads, and rich pasta dishes. The meat turns tough if overcooked, so it is pulled from the heat as soon as it is opaque.
