The American lobster (Homarus americanus) is a large marine crustacean from the cold waters of the North Atlantic, prized as one of the most luxurious foods of the sea. Inside its hard blue-black shell, which turns bright red when cooked, is sweet, firm, succulent white meat concentrated in the tail and the two big claws.
