About Crustaceans, lobster, northern, raw

The American lobster (Homarus americanus) is a large marine crustacean from the cold waters of the North Atlantic, prized as one of the most luxurious foods of the sea. Inside its hard blue-black shell, which turns bright red when cooked, is sweet, firm, succulent white meat concentrated in the tail and the two big claws. Lobster is lean and high in protein, supplying vitamin B12, zinc, selenium, copper, and omega-3 fatty acids.

It is most famously steamed or boiled and served with drawn butter, but it also stars in lobster rolls, bisque, mac and cheese, and grilled or baked dishes, and the shells make a rich stock. Lobster is best cooked live or immediately after, and it should never be overcooked, which turns the meat tough and chewy. Choose lively lobsters that feel heavy for their size, and keep live ones cold and moist, cooking them the same day.
