About Nuts, acorns, dried
The acorn is the nut of oak trees, a single seed encased in a smooth, leathery shell and cradled in a distinctive cup-shaped cap. Though strongly associated with wildlife, acorns have been a human food for thousands of years, a staple for Indigenous peoples of North America, Korea, and the Mediterranean. Raw acorns are bitter and astringent because of their high tannin content, so they must be shelled and leached in water to draw out the tannins before they become palatable, turning mild, nutty, and faintly sweet.
Once processed, acorns are rich in complex carbohydrates, healthy fats, fiber, and minerals. They are most often dried and ground into a gluten-free flour for breads, pancakes, and porridge, and in Korean cooking acorn starch is set into the savory jelly known as dotorimuk.
