The eastern oyster (Crassostrea virginica), also called the Atlantic or Virginia oyster, is an edible marine bivalve native to the eastern coasts of the Americas and the most widely farmed oyster in North America. Inside its rough, irregular gray shell is plump, glistening meat with a soft texture and a briny, mineral flavor that subtly reflects the waters where it grew.
