About Fish, dolphinfish, raw
Mahi-mahi (Coryphaena hippurus), also called dolphinfish or dorado, is a brilliantly colored, fast-swimming saltwater fish found in warm waters worldwide; despite the name it is a true fish, unrelated to the dolphin mammal. It has firm, lean flesh with large, moist flakes and a mild, slightly sweet flavor that takes well to bold seasoning. Mahi-mahi is high in quality protein and low in fat, supplying vitamin B12, selenium, niacin, and potassium.
Its sturdy texture makes it ideal for the grill, and it is equally good pan-seared, blackened, baked, or broiled, starring in fish tacos, sandwiches, and tropical preparations with citrus, mango, and chili. Because the flesh is lean, it is best cooked just until it turns opaque to keep it moist. Choose fillets that look moist and pinkish with a clean, fresh smell, and store mahi-mahi well chilled, using it within a day or two or freezing it.
