About Vinegar, balsamic
Balsamic vinegar is the dark, glossy, sweet-and-sour vinegar from Italy, made from grape must that's cooked down and aged — the finest traditional versions for many years, into something syrupy and complex. It's drizzled over salads, strawberries, cheese and roasted vegetables in equal measure.
It's a little higher in calories and natural sugar than a plain vinegar, owing to the grape must, but it's still used by the teaspoon, so it contributes very little to a meal nutritionally. Its value is all flavor — a sweet, tangy depth that brightens and balances.
A small drizzle of balsamic adds a lot of sweet-tart character for next to nothing in calories; the aged, traditional kind is more intense and syrupy, where everyday versions are thinner and sharper.
